Chinese Stir-fry Pork

The secret of a successful stir-fry is to have all the ingredients prepared before you begin cooking, and then to cook them swiftly so that they reach the table still crisp and alive with color. Recipe serves 4-5.

Ingredients:

1 pound (500 g) pork fillet
1 tablespoon polyunsaturated oil
1/2 teaspoon ginger grated
1 clove garlic, crushed
Pinch Chinese five spice powder
1 cup small broccoli florets
1 cup small cauliflower florets
1/2 green pepper (capsicum), diced
2 medium carrots, cut into matchsticks (julienne)
3 spring onions, chopped
16-20 snow peas
10-12 button mushrooms, sliced
2 stalks celery, sliced diagonally
1 apple, cut into slices
1/4 cucumber, cut into slices
1 tablespoon soy sauce
1 tablespoon honey
1 tablespoon tomato ketchup (sauce)
1 1/2 tablespoons cornflour (cornstarch)
1 cup chicken stock

Method:

1. Prepare pork fillet by slicing thinly at an angle.
2. Heat oil in a pan until very hot. Add pork, ginger, garlic and five spice. Stir fry for 3-5 minutes.
3. Add broccoli, cauliflower, pepper and carrots. Stir-fry 1-2 minutes, making sure that nothing is allowed to overcook and become limp.
4. Now add the rest of the vegetables and continue stir-frying over high heat for another 1-2 minutes.
5. In a bowl, combine soy sauce, honey, tomato sauce, cornflour (cornstarch) and chicken stock. Add mixture to the chicken and vegetables, bring to the boil, cover, turn down the heat and simmer 2-3 minutes only.
6. Serve on a bed of boiled brown rice.

Chinese Jewelled Rice


Another fried rice medley, this time with crab meat and water chestnuts, providing contrasting textures and flavors. Recipe serves 4.

Ingredients:

1 3/4 cup white long grain rice
3 tablespoons vegetable oil
1 onion, roughly chopped
4 dried black Chinese mushrooms, soaked for 10 minutes in warm water to cover
4 ounces (125 g) cooked ham, diced
6 ounces (185 g) drained canned white crab meat
1/2 cup drained canned water chestnuts
1 cup peas, thawed if frozen
2 tablespoons oyster sauce
1 teaspoon granulated sugar
Salt

Method:

1. Rinse the rice, then cook for about 10-12 minutes in a saucepan of lightly salted boiling water. Drain, refresh under cold water, drain again and allow to cool. Heat half the oil in a wok. When very hot, stir-fry the rice for 3 minutes. Transfer the cooked rice to a bowl and set aside.
2. Heat the remaining oil in the wok and cook the onion until softened but not colored. Drain the mushrooms, cut off and discard the stems, then chop the caps.
3. Add the chopped mushrooms to the wok, with all the remaining ingredients except the rice. Stir-fry for 2 minutes, then add the rice and stir-fry for about 3 minutes more. Serve at once.

Tip: When adding the oil to the hot wok, drizzle it in a "necklace" just below the rim. As it runs down, it will coat the inner surface as it heats.

Chinese Fried Rice


This dish, a variation on Special Fried Rice, is more elaborate than the more familiar egg fried rice, and is almost a meal in itself. Recipe serves 4.

Ingredients:

2 ounces (60 g) cooked ham
2 ounces (60 g) cooked prawns, peeled
3 eggs
1 teaspoon salt
2 spring onions, finely chopped
4 tablespoons vegetable oil
1 cup green peas, thawed if frozen
1 tablespoon light soy sauce
1 tablespoon Chinese rice wine or dry sherry
4 cups cooked white long grain rice

Method:

1. Dice the cooked ham finely. Pat the cooked prawns dry on kitchen paper.
2. In a bowl, beat the eggs with a pinch of salt and a few spring onion pieces.
3. Heat about half the oil in a wok, stir-fry the peas, prawns and ham for 1 minute, then add the soy sauce and rice wine or sherry. Transfer to a bowl and keep hot.
4. Heat the remaining oil in the wok and scramble the eggs lightly. Add the rice and stir to make sure that the grains are separate. Add the remaining salt, the remaining spring onions and the prawn mixture. Toss over the heat to mix. Serve hot or cold.

Variations: This is a versatile recipe and is ideal for using up leftovers. Use cooked chicken or turkey instead of the ham, doubling the quantity if you omit the prawns.

Smooth Chinese Corn Soup

This is an easily prepared hearty soup, golden in color with egg white and pink ham. Recipe serves 4-6.

Ingredients:

1 cup cooked ground (minced) chicken
1 tablespoon dry sherry
2 tablespoons chopped cooked ham
2 tablespoons water chestnuts, finely chopped
1/2 teaspoon salt
6 cups chicken stock
2 egg whites
4 large mushrooms (dried)
1 tablespoon pickled cabbage
2 cups pureed corn
1 tablespoon cornflour

Method:

1. Bring stock to boil in wok, add chopped mushrooms, salt and pickled cabbage and cook until tender.
2. Add pureed corn and continue to boil for about 5 minutes then add chopped chicken and ham, sherry and chestnuts. Boil for a further 2 to 3 minutes and add cornflour mixed in 2 tablespoons cold water.
3. Stir until clear. Reduce heat and gently stir in egg whites. Serve hot.

Chinese Cabbage with Ham


This easy Chinese vegetable stir-fry is perfect for using up leftover cooked ham. Recipe serves 4.

Ingredients:

1 small leek
10 ounces (315 g) Chinese cabbage
11 ounces (345 g) cooked ham
2 cloves garlic
3/4 inch (2 cm) fresh root (green) ginger
1/4 cup sunflower or corn oil
Salt to taste
Freshly milled pepper
1 tablespoon medium sherry
2 teaspoons cornflour
1/2 cup vegetable stock
3 tablespoons soy sauce

Method:

1. Trim leek, slit length-wise and wash thoroughly under cold, running water to remove grit and mud between layers. Shake dry. Cut into thin rings.
2. Separate Chinese cabbage leaves. Wash each leaf thoroughly under cold, running water and drain. Cut leaves into thin strips, discarding stalks.
3. Cut ham into thin strips, removing any fat and gristle.
4. Crush garlic on to plate with garlic press. Peel, slice and finely chop ginger.
5. Heat oil in wok until hot, but not smoking. Add ham, garlic and ginger and stir-fry for 1 minute.
6. Mix in leek and strips of Chinese cabbage leaves and stir-fry for 5 minutes. Season lightly with salt and pepper. Moisten with sherry.
7. Mix cornflour with stock and soy sauce until smooth. Add to vegetables in wok. Bring to boil. Reheat until piping hot, stirring. Adjust seasoning to taste.
8. Serve straight away with rice or rice noodles.

Braised Chinese Vegetables


This quick and tasty combination of Chinese cabbage, broccoli, leeks and green beans only takes 20 minutes to prepare and cook. Serve with a meat dish and rice. Recipe serves 4-6.

Ingredients:

6 1/2 ounces (200 g) Chinese cabbage, chopped
6 1/2 ounces (200 g) broccoli, cut into florets
5 ounces (150 g) leeks, sliced
5 ounces (150 g) green beans, sliced
4 spring onions (scallions), sliced
2 tablespoons vegetable oil
1 teaspoon sesame oil
2 teaspoons (prepared) freshly crushed garlic
1 teaspoon freshly chopped ginger
1/2 cup vegetable or chicken stock
2 teaspoons soy sauce
1/2 teaspoon chili sauce
2 teaspoons cornflour mixed with water to form a paste

Method:

1. Heat oil in a wok or deep fry-pan. Add garlic and ginger, cook for a few seconds then add the vegetables and cook, stirring, for 2 minutes.
2. Add the stock, soy sauce and chili sauce. Cover and cook for 4-5 minutes.
3. Move vegetables to one side and add the cornflour paste. Stir until it thickens. Mix vegetables in the sauce and serve.

Pork Spareribs Chinese-Style

Spareribs are one of the most popular Chinese dishes and this is a very simple and good recipe. Serves 4-6.

Ingredients:

1 side pork spareribs
1 clove garlic, crushed
1 medium-sized piece of fresh ginger
2 tablespoons brown bean sauce
3 tablespoons vegetable oil
3/4 cup water
1 tablespoon sugar
2 teaspoons cornflour
2 or 3 spring onions, finely chopped

Method:

1. Chop spareribs into 1 inch (2.5 cm) portions and trim excess fat.
2. Mix brown bean sauce, garlic and ginger into a sauce. Bring oil to medium/high heat in a wok, blend in sauce and quickly add spareribs. Continue to stir-fry for about 1 minute.
3. Add sugar and water and bring immediately to boil, then simmer for 20 minutes.
4. Mix cornflour with 1 tablespoon of water and add to wok, stir-frying with a little more heat to glaze contents all over. This should take only 1 or 2 minutes. Serve immediately on heated dish, garnished with spring onions.

Chinese Beef Stir-Fry


Oriental food is very popular. Try this authentic yet simple stir-fry. Recipe serves 4.

Ingredients:

1 pound (500 g) lean rump steak
1 small onion
3 spring onions, cut into 1 inch (2.5 cm) lengths
6 ounces (185 g) snow peas, stalk ends trimmed
1 tablespoon olive oil
1 teaspoon freshly chopped ginger
1 teaspoon freshly crushed garlic
1 tablespoon soy sauce
1 tablespoon dry sherry
1/2 cup beef stock
2 teaspoons cornflour

Method:

1. Trim steak of any excess fat. Cut steak into thin strips across the grain. Peel and cut onion into sixths, separating leaves.
2. Mix soy, sherry and beef stock with cornflour, set aside.
3. Heat 2 teaspoons oil in a wok or fry pan. Add onion and spring onions and stir-fry over medium heat for 2-3 minutes. Add snow peas and toss over heat for further 5-7 minutes sprinkling with a little water to create steam to soften vegetables. Remove to a bowl.
4. Add remaining oil to wok or fry pan with ginger and garlic and cook for 1 minute. Increase heat, add beef strips and stir-fry until beef changes color and is just cooked through.
5. Return vegetables to wok and toss over heat for a few seconds. Stir mixed liquids again, pour into wok contents.
6. Toss ingredients over medium heat until sauce thickens to coat meat and vegetables. Serve hot with boiled rice.

Chicken with Chinese Broccoli


In many Asian dishes meat and vegetables are cooked together, as they are in this easy dish. Served with rice it forms a complete meal. Recipe serves 4.

Ingredients:

12 1/2 ounces (400 g) Chinese broccoli
3 teaspoons freshly crushed garlic
1 chili, finely sliced
5 spring onions, finely sliced
6 ounces (180 g) chicken thigh or breast fillets, finely sliced
2 tablespoons oil
1 tablespoon soy sauce
1/3 cup chicken stock
2 teaspoons cornflour made into a paste with some water
3 1/2 ounces (100 g) oyster mushrooms

Method:

1. Wash, trim and slice broccoli.
2. Heat oil in a wok or fry pan. When it is very hot add the garlic, chili and spring onion and cook for a few minutes.
3. Reduce heat, add chicken and stir-fry for 2 minutes. Add the soy sauce and stock and bring to the boil.
4. Add the broccoli and mushrooms and stir-fry for 3 minutes over medium heat until the broccoli has reduced in bulk.
5. Move meat and vegetables to one side and add the cornflour paste and cook, stirring, until the sauce thickens. Serve immediately.

Chinese Spinach with Noodles


This easy Chinese stir-fry is a meal in itself. Recipe serves 4.

Ingredients:

1 pound (500 g) Chinese spinach
4 tablespoons vegetable oil
1/2 onion, finely diced
2 cloves garlic, crushed
1 1/2 teaspoons freshly chopped ginger
1/4 cup soy sauce
1 1/2 tablespoons dry sherry
2 tablespoons chicken stock
1 teaspoon sugar
1 pound (500 g) noodles
2 tablespoons butter or oil

Method:

1. Wash and drain the spinach. Discard tough part of stems and roughly chop leaves and stems.
2. Heat oil in a wok or large fry pan. Add the onion, garlic and ginger. Cook for 1/2 minute then add the spinach. Toss to coat in the oil, cooking for 1 1/2 minutes.
3. Add the soy sauce, sherry, chicken stock and sugar and stir-fry for a further 2-3 minutes.
4. In the meantime, cook the noodles in boiling water. Add to spinach along with the butter or oil and toss until well combined. Add more soy sauce or chicken stock if required. Serve hot.
